Perennial. Zones 4-8. Young leaves have a light cucumber flavour and can be added to salads, soups, dips and dressings. Salad burnet has similar medicinal properties to the closely related Great Burnet (Sanguisorba officinalis). A member of the Rose family, it's main medicinal properties relate to its astringent action. Plants hold up in heat well but grow more succulent and tastey leaves with regular watering.
